As you will have noticed, this section of the site is dedicated to CHEESE. In fact MY cheese, as all the cheeses you see featured here are made by me personally here on our farm just outside Belmopan (Belize). Some say these are the best cheeses in Belize. That is for you the reader to judge, but all I would say is that they are all made with care and a sincere dedication to getting as close to the cheeses I knew when I traveled and lived around Europe many years ago. We cannot all go to Europe, so I hope I am bringing a little of Europe across the Atlantic to Belize.
However it would be wrong to let this opportunity pass by without acknowledging the inspiration of Ian Anderson at Caves Branch Resort who started me off on this voyage of discovery. Ian has inspired many people over the years - I am just one of them.
I would also like to offer my thanks to Larry and Linda from The Three Shepherds Farm in Vermont who patiently taught me and many others the finer points of cheese maklng. Thanks also go to my chief bottle washer and lifetime supporter Sue. To all of those, my thanks.
